Tammi and Stuart Jonas raise rare-breed Large Black pigs and a small herd of pastured Lowline cattle across volcanic paddocks, feeding their animals on waste streams such as spent brewers' grain and dairy whey rather than commodity grain.
The farm runs an on-farm licensed butcher shop and curing room, built with community crowdfunding, where they process their animals nose to tail. Alongside fresh pork and beef they make cured meats such as salami, coppa, pancetta and jamon, plus bone broths and lard soap.
