The hens are never locked up and run in small flocks of a few hundred birds, each in its own paddock with a mobile roosting shed and laying boxes, protected by a Maremma guardian dog. The birds are not beak-trimmed and are fed a natural grain diet with no additives. Eggs are sold locally and at farmers' markets, including on Churchill Island.
